Baked Potatoes with Lemon and Pepper Salsa

Makes 8 servings

  • 8 medium-sized potatoes
  • 1 jar lemon pepper salsa
  • 1 cup sour cream
  • Salt to taste

Boil 8 medium-sized potatoes in water with a dash of salt until they are soft but not overly so. Remove from water and allow to cool in refrigerator, preferably overnight. Then remove potatoes from refrigerator, peel, and cut lengthwise into fourths.

Spread half a jar of Lemon and Pepper Salsa over the potatoes. Mix gently, and place on baking sheet covered by tin foil. Bake at 350 degrees in oven for 40 minutes, gently mixing halfway through.

Remove from oven, spread with 1 cup sour cream, and return to oven for 15 more minutes. The cream will be absorbed by the potatoes. Serve hot and enjoy.
