Apple Olive Oil Cake
- 4 cups flour
- 2 cups sugar
- 4 tsp baking powder
- 1/4 tsp salt
- 1 cup Negev Nectars olive oil
- 3/4 cups orange juice
- 4 eggs
- 4 medium apples, peeled and thinly sliced
- 1/4 cup of cinnamon/sugar (make sure it's very cinnamon-y!)
- 1 tsp vanilla extract
Preheat the oven to 350 degrees. Grease and flour a tube pan. In a mixing bowl, sift together the flour, sugar, baking powder and salt. Add the oil, orange juice, vanilla, and eggs and mix well on low speed. Put half the batter in the greased pan and top with apple slices. Go easy on the apples, as too many will prevent the cake from baking in the middle. Dust generously with cinnamon sugar, being careful to keep it away from the sides of the pan as it encourages sticking. Pour on the rest of the batter, top with apples and dust generously with cinnamon sugar. Bake at 350 degrees for 1 1/2 hours or until a toothpick comes out clean. Let the cake cool completely in the pan before turning it onto a serving plate.
